WhitePepper is a premier UK independent culinary school, delivering international qualifications since 2010. Our flagship programme, the Level 4 Diploma in professional Culinary Arts, offers world-class practical training with personalised career support, giving graduates exceptional prospects.
We hold Gold Centre status from the Confederation of Hospitality & Tourism’s academic council – an honour shared with only a handful of institutions worldwide.
Graduates also earn national framework credits (NQFC), enabling progression into further and higher education for those wishing to continue their academic journey.

We Are Trailblazers
WhitePepper pioneered the UK’s shortest Level 4 Diploma in 2018, achievable in just 16-weeks while fully maintaining statutory guided learning hours. This model, now widely adopted across the UK, reduces both attendance time and overall cost, including time away from paid work and extended tuition fees. These efficiencies deliver significant advantages to trainees.
WhitePepper earned a regional BAPTA education award in 2018 – competing and triumphing over Bournemouth University, with a more effective approach to education . In 2021, WhitePepper went on to introduce the world’s first blended Level 2 culinary qualification, which was largely based on a remote platform.

Luke Stuart
Executive Chef
With a steadfast approach, Luke is one of the most consistent figures in British culinary education for the past 2 decades. An entrepreneur, chef and hospitality trailblazer, his 25+ career has taken him all over the world, including London, the Mediterranean and the West Indies. Luke has worked for household names such as, Trump, Conran & Roux, and has graduates now contribute at the forefront of leading establishments worldwide.
Brittany Coleman-Smith
Brittany brings a dynamic blend of operational expertise and culinary training to WhitePepper. Formerly a manager within the Rockwater restaurant group and a qualified chef, she now oversees student liaison and supports departments both front and back of house. Her calm efficiency, attention to detail and commitment to quality help streamline processes and elevate the student experience throughout the academy.
James Palmer-Snellin
Head Chef
James is a formidable chef who helps shape every aspect of WhitePepper’s culinary training, from menu development and provisioning to budgeting and hands-on teaching. His refined skill set and infectious passion for food were forged in boutique hotels and patisserie kitchens early in his career. Students and guests alike admire his vibrant super-club events.
Hande Olgun
Pastry Chef
Hande brings a unque blend of academic discipline and culinary creativity to WhitePepper.Originally an academic in Turkey, she transitioned into professional cookery with a particular passion for patisserie. Her curiosity and precision drive her constant cycle of researching, testing and refining ideas. When she isn’t crafting pastries, she’s developing new concepts that enrich our culinary programmes.
